Shortcake

2 cups sifted all-purpose flour 6 tablespoons butter or shortening
4 teaspoons Davis Baking Powder 3/4 cup milk
3/4 teaspoon salt  
1/4 cup granulated sugar  
Topping:
6 cups sliced strawberries 1/4 cup granulated sugar
1 cup whipping cream 2 tablespoons sugar
1/2 teaspoon vanilla  
Serves 6
 

Instructions:

In a large bowl sift together dry ingredients - flour, baking powder, salt and sugar. Add butter or shortening and cut in with pastry blender. Add milk Mix by lifting the dough around until all the dry ingredients are combined. Sift some flour onto a pastry board or table and place dough in the center. Roll out lightly to 1/2 inch thickness.* Place on a large baking sheet and bake at 450 degrees F. for 15 to 18 minutes.

*You can also cut dough with cookie cutter or biscuit cutter before baking, making individual shortcakes.

Topping: While shortcake is baking, in a bowl stir together sliced berries, and 1/4 cup sugar. Let stand about 20 minutes. In a chilled medium bowl combine whipping cream, 2 tablespoons sugar and vanilla. Beat until stiff peaks form.

To assemble: Using a serrated knife, cut each shortcake in half horizontally. Spoon half of the berry mixture and half of the whipped cream over bottom layers. Carefully replace tops. Spoon remaining berry mixture over shortcakes; spoon whipped cream directly onto berries. Serve immediately.
