Butterscotch Pie

Baked pastry shell 1 cup dark brown sugar
2 cups milk 4 tablespoons melted butter
3 eggs, separated 1/4 teaspoon salt
3 1/2 tablespoons cornstarch 1/2 teaspoon vanilla
Makes 1 - 9 inch pie
 

Instructions:

Preheat oven to 325degrees F.

Scald the milk in a double boiler. Beat the egg yolks. Mix the cornstarch and brown sugar and stir into the beaten egg yolks. Add the hot milk gradually, then the butter and salt. Pour into top of double boiler and cook until thick. Remove from heat, cool slightly and add vanilla.

To make meringue, beat the 3 egg whites until stiff. Gradually add 6 tablespoons granulated sugar. Pour the cooled filling into the baked pastry shell and cover with the meringue.

Brown about 15 minutes in a 325 degree F. Oven.
