| 2 cups very ripe, banana puree (about 6 bananas) | 2 teaspoons baking soda |
| 2 1/2 cups dark brown sugar, packed | 1 1/2 teaspoons baking powder |
| 1/2 cup oil | 3/8 teaspoon salt |
| 4 eggs | 3 1/4 cups all-purpose flour |
| 2 teaspoons vanilla extract | 1 cup coca cola beverage (or coffee) |
2 teaspoons cinnamon |
1 cup shredded semi-sweet chocolate |
| 1/2 teaspoon cloves | 1 cup chopped walnuts |
Makes
two 9x5-inch loaves |

Instructions: Preheat oven to 300 degrees F. Spray two 9 by 5 inch loaf pans with non-stick cooking spray. In a food processor, puree the bananas and set aside. Without cleaning the work bowl, blend the sugars, oil, eggs and vanilla for a minute. Add in the dry ingredients and bananas and blend, pouring in the cocoa cola as mixtue is blending together. Blend in the food processor until smooth, about 1 minute. Spoon into the prepared loaf pans and
set the pans on the baking sheet. Bake at 300 degrees F. for one hour
