Bubbie's Best Cocoa Cola Banana Loaf

2 cups very ripe, banana puree (about 6 bananas) 2 teaspoons baking soda
2 1/2 cups dark brown sugar, packed 1 1/2 teaspoons baking powder
1/2 cup oil 3/8 teaspoon salt
4 eggs 3 1/4 cups all-purpose flour
2 teaspoons vanilla extract 1 cup coca cola beverage (or coffee)
2 teaspoons cinnamon
1 cup shredded semi-sweet chocolate
1/2 teaspoon cloves 1 cup chopped walnuts
Makes two 9x5-inch loaves

Instructions:

Preheat oven to 300 degrees F. Spray two 9 by 5 inch loaf pans with non-stick cooking spray.

In a food processor, puree the bananas and set aside. Without cleaning the work bowl, blend the sugars, oil, eggs and vanilla for a minute. Add in the dry ingredients and bananas and blend, pouring in the cocoa cola as mixtue is blending together. Blend in the food processor until smooth, about 1 minute.

Spoon into the prepared loaf pans and set the pans on the baking sheet. Bake at 300 degrees F. for one hour 20 minutes, or until cakes test done.
Makes two loaves.
These keep well or freeze
