Apple Dumplings

6 medium-sized Granny Smith Apples, peeled and cored 1 teaspoon lemon juice
Shortcake dough (recipe) 1/2 cup water
1/2 cup brown sugar, packed 1/2 cup granulated sugar
1/2 teaspoon cinnamon  
Serves 6
 

Instructions:

Preheat oven to 400 degrees F. Spray a 9x13 inch baking dish with cooking spray; set aside.

Prepare shortcake dough as in recipe, but roll dough out until it is a little more than one-eighth inch thick; cut in six rounds, each large enough to enclose an apple. Mix together sugar and cinnamon. Stand apple in center of dough and fill center of apple with sugar mixture; sprinkle a few drops of lemon juice on top. Wrap the dough around the apple and pinch together. Stand the joined part of the pastry down. Place all apples in prepared pan and prick the pastry with a fork, to allow steam to escape. In a small bowl, combine 1/2 cup water with 1/2 cup granulated sugar; pour into bottom of pan containing the apples.

Place in 400 degree F. oven and bake for 40 to 45 minutes. Pastry should be browned and apple tender.

Serve hot with syrup from pan.

Bake at 350 degrees F. for 1 hour. Serve hot.
