Holiday Pumpkin Bread

1/2 cup margarine, softened 1/2 teaspoon salt
1 cup firmly packed light brown sugar 1/4 teaspoon baking soda
1/2 cup granulated sugar 1/2 teaspoon ground cinnamon
1 egg, well beaten 1/2 teaspoon ground nutmeg
3/4 cup mashed cooked pumpkin*
1/4 teaspoon ground ginger
2 cups sifted all-purpose flour
1/2 cup buttermilk
1 tablespoon Davis Baking Powder  
Optional: Vanilla Buttercream Frosting
Optional: Chopped walnuts, for garnish
Yield: one 9x5-inch loaf

Instructions:

Preheat oven to350 degrees F. Grease and flour a 9x5x3-inch loaf pan.

With an electric mixer, beat together margarine and sugars; blend in egg and pumpkin. In a separate bowl, sift together flour, baking powder, salt, baking soda and spices. Alternately blend flour mixture and buttermilk into pumpkin mixture. Pour batter into prepared loaf pan.

Bake at 350 degrees F. for 60 minutes or until toothpick inserted in center comes out clean.

Frost with butter cream frosting; sprinkle with chopped walnuts, if desired.

*Canned solid pack pumpkin can be substituted.
