| Apples 'N Cream Pie |

| 1/2 cup granulated sugar | 2 to 2 1/2 cups sliced apples (use granny smith, or other firm, tart baking apples) |
| 1/4 cup brown sugar | 1 tablespoon all-purpose flour |
| 2 1/2 tablespoons cornstarch | 2 teaspoons cinnamon |
| 1 cup whipping cream | 1/2 teaspoon grated ginger or 1/4 teaspoon ground ginger |
| 1 teaspoon vanilla extract | recipe for 2 (9-inch pie crusts) or two frozen 9-inch pie crists |

Instructions: Preheat oven to 400 degrees F. Take a frozen 9-inch pie crust or prepare pie crust for 9-inch pie pan and bake bottom crust according to directions. Save other crust for top. In a small sauce pan whisk together the sugars and cornstarch until no lumps remain. Turn heat on to medium and whisk in whipping cream until thoroughly mixed. Heat, stirring constantly, until mixture begins to bubble. Remove from heat and stir in 1/4 cup butter and vanilla. In a large bowl combine apples, cinnamon and ginger. Toss gently until apples are coated. Place apples into baked pie shell. Pour cream mixture over apples. Place pie crust on top, pressing edges together. Cut slits into top of crust for venting, or place a pie bird in the center. Bake at 400 degrees F. for about 45 to 50 minutes. Cool on wire racks then refrigerate until ready to serve.
